Simple Food Stuffs

These are some of the recipes I've thought of over the years using fresh produce with limited processes, which have become family favorites.  When I say heat the oven - use a temperature you usually cook with (for me that 160-180'C).  Be mindful of calories and allergies; all of my recipes include all food types (omit/swap ingredients according to taste and health, these are flexible recipes)

Banana Nice-Cream

Freeze 2-3 bananas overnight. Add double cream/milk alternative - 1 cup Add few drops of vanilla and almond essence Blend until smooth (add more cream/milk alternative as desired) Add any toppings or additional frozen fruit (try strawberries) Volia, delicious nice-cream

Citrus Chicken

Any type of chicken to an oven tray/pan Heat the oven Line the pan/tray with EVOO, sliced lemons, limes and grapefruit Season preferred type of chicken with preferred herbs and spices - try paprika, cayenne pepper, chili flakes, salt & pepper, squeeze lemon and lime juice over the top Cook in hot oven until chicken is completely cooked (check cooking instructions on packaging) Serve with salad, fries, onion rings - anything that takes your fancy!

Root Vegetables

Heat oven Peel sweet potato and slice into wedges Add 1 tablespoon of organic coconut oil and salt and pepper to season Make sure all potato surface is covered in seasoning and oil Add to oven tray/dish and cook until potato can be pierced through with a knife Any style of mayo works here

OK, hear me out

This should be severely limited to a tiny portion once or twice a month for those who exercise at least 3 times a week in a gym. Thinly spread the chocolate to a wafer biscuit or a thin salted cracker. Whip double cream until firm to scoop - add small dollop to the chocolate spread. Enjoy immensely!

Passata

Use a variety of tomatoes - add garlic (2-3 cloves), basil and thyme (small bunch), salt, pepper, EVOO (2-3 tablespoons). Blend well Low heat on the hob - glug of EVOO add extra herbs of choice and clopped garlic Add a good splash of red wine (or omit) simmer for 5 minutes or so Add passata from blender Add 2-3 tablespoons of tomato puree and gently stir Cook on low-medium heat for 10-15 minutes Add cooked pasta or pour over cooked chicken - option to add slices of mozzarella

Braised Cabbage

Heat the oven Slice a red cabbage, add to an over tray. Coat the cabbage with brown sugar (no more than 1-2 table spoons depending on the amount of cabbage). Add small knobs of butter intermittently over the top of the cabbage. Season with salt and pepper Oven bake for 20 minutes (shaking the tray half-way through cooking to ensure coating and no burning of the edges) - there should be some bite to the cabbage.
